Though the weather is getting cool,
there’s nothing wrong with dreaming of the tropics.

makes ~7 servings
5 c. oats
1 c. unsweetened, shredded coconut
1 c. mixed nuts (whole or chopped)
1 tbs. vegetable oil
2/3 c. organic blue agave nectar
2 tbs. ground flaxseed
1 tsp. ground ginger
1 tsp. ground nutmeg
1 tsp. ground sea salt
1 tbs. ground cinnamon
1 1/2 c. dried tropical fruit mix (large pieces/cut small)
Preheat oven to 350 degrees F. Line a baking sheet with tinfoil and set aside.
In a large bowl, mix oats, coconut, nuts, flaxseed and spices. Once combined, pour vegetable oil and agave nectar into the bowl to coat all the ingredients.
Transfer the oat mixture onto the lined baking sheet and place on the bottom rack of the oven.
Bake for 20 minutes or until golden brown. Remove from oven once desired crispiness is achieved and set aside to cool.
While cooling, gently stir in the dried tropical fruit.
Once completely cool, store granola in an airtight container for up to two weeks.
Pour yourself a bowl.
