A fudge-y delicious treat to curb your holiday chocolate cravings.
adapted from Martha Stewart
1/4 c. unsweetened cocoa powder
1/t tsp. baking soda
1/4 tsp. coarse salt
1 cup 2 sticks of butter, cut into small pieces
1 1/4 c. white sugar
1 1/4 c. bittersweet chocolate pieces
4 large eggs, room temperature
1/2 c. cold water
1 tsp. pure vanilla extract
1 c. chopped walnuts
Cheater Chocolate Sauce for drizzling before serving
Preheat oven to 350 degrees with a rack placed in the center of the oven. Spray 8×8 square baking pan with nonstick cooking spray or grease with canola oil, making sure the sides are greased thoroughly. Set baking pan aside.
In a medium mixing bowl, lightly whisk together cocoa powder, baking soda and salt. Set mixture aside.
In a large heatproof bowl, like a metal mixing bowl, combine butter, sugar and chocolate pieces.
Prepare a double broiler by bringing 1/2 a saucepan full of water to boil. Place the heatproof bowl on top of the saucepan of boiling water. You do not want the water in the saucepan to touch the heatproof bowl (hence, only filling the saucepan 1/2 the way full). The boiling water will begin to cause the butter, sugar and chocolate mixture to begin to melt.
Stir the mixture with a wooden spoon until it becomes smooth. Remove from heat.
Whisk eggs, cold water and vanilla extract into the cooling butter, sugar and chocolate mixture. Once combined, whisk in the cocoa powder, baking soda and salt mixture.
When all ingredients are incorporated, fold chopped walnuts into brownie batter. Transfer finished batter into greased baking pan.
Bake at 350 degrees for 35-40 minutes or until brownies are set. You’ll want to let the brownies cool completely (15-20 minutes) before cutting and serving.
Once cool, cut brownies and carefully remove from pan. Microwave Cheater Chocolate Sauce until it reaches a drizzle-able consistency, perfect for pouring on top of brownies.
It may also be a good idea to garnish each serving with a scoop or two of vanilla ice-cream.
