PB + chocolate chunk cookies . . .
Some combinations are just meant to be. Can I get an amen? But seriously, is there anything better than peanut butter & chocolate. I honestly don’t think so. What’s your favorite cookie combination?
makes ~2 dozen cookies
1/2 c. (1 stick) butter, softened
1/2 c. chunky peanut butter
1/2 c. sugar
1/4 c. brown sugar
1 large egg
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 c. bittersweet chocolate, chopped into chunks
coarse sea salt for sprinkling
Preheat oven to 350 degrees.
In a large mixing bowl, cream together butter, peanut butter, sugar, brown sugar, egg and vanilla. In a second bowl, whist together flour, baking soda and baking powder. Pour flour mixture into butter mixture and stir until combined.
Once incorporated, fold in your pieces of chocolate chunks.
Drop generous spoonfuls of dough onto an un-greased cookie sheet. Make sure to press each dough ball with a fork to help flatten.
Bake your cookies until the bottom is slightly golden brown. This will take ~10 minutes, but be sure to keep your eyes on them. Burnt (or extra crispy) cookies are no bueno at my place.
Remove PB chocolate chunk cookies from the oven, and immediately sprinkle each with a pinch of coarse sea salt. Keep them on the baking sheet for a minute more to ensure they set before transferring to a cooling rack.
