Lemon-y sweet treats make
things feel like spring.
recipe adapted from here
makes 12-16 cookies
1/2 c. unsalted butter, softened
1 c. sugar
1 tsp. vanilla extract
1 egg
zest from one large lemon
juice from one large lemon
1/2 tsp. salt
1/4 tsp. baking powder
1/8 tsp. baking soda
1 1/2 c. all-purpose flour
1/4 c. powdered sugar
Preheat oven to 350 degrees, and line a baking sheet with parchment paper.
Using a large bowl, combine butter and sugar until light and fluffy. Add in lemon juice, lemon zest, vanilla extract and egg, stirring until all ingredients are incorporated.
In a medium bowl, mix flour, salt, baking powder and baking soda. Once combined, slowly add the dry ingredients to the wet. You’ll want to do this in thirds so everything has a chance to blend well.
Put your cookie dough in the fridge to set up for 5-10 minutes. This will make the next step a lot easier.
Pour your powdered sugar onto a plate. Remove dough from the fridge, and shape spoonfuls into little balls. Roll each ball in the powdered sugar before placing on the parchment-lined cookie sheet.
Bake cookies at 350 for 10-15 minutes. You will want to keep a close eye on them because you won’t want them to become browned.
Let the cookies rest on the hot baking sheet for 2 minutes. If desired, sprinkle a bit more powdered sugar on each cookie while they are still warm.
Transfer cookies onto a rack to finish cooling.

these are some of my favorite cookies! i roll mine in powdered sugar before i bake them and they’re so good. lemon = spring and i need spring really really bad right now.
