Almond nutmeg granola recipe . . .
Granola is the perfect go-to. Bake it once, and enjoy meal after meal of deliciousness. After all, breakfast is my favorite meal of the day so it deserves to be treated as such. I like to bake a batch of granola at the beginning of the week. It’s my fail proof plan for groggy mornings sure to come. All I have to do is walk to the cupboard, find my pre-made treat, pour it in a bowl with a few other odds and ends, grab a spoon and enjoy. It ensures that I never miss out on best meal of the day–any ole breakfast simply won’t do.
Recipe:
makes ~6 servings
3 c. old-fashioned rolled oats
3 tbs. oat flour
1 c. rough chopped almonds
1/2 c. honey
1/3 c. canola oil
1 tsp. almond extract
1 tsp. freshly grated nutmeg
1/8 tsp. coarse sea salt
1 c. dried fruit of choice
Preheat oven to 300 degrees, and line a baking sheet with parchment paper.
In a large bowl, toss oats, flour and almonds. Once combined, whisk in honey, oil, almond extract, nutmeg and salt. You want your mixture to be well incorporated.
Spread granola onto parchment lined baking sheet and bake for 30-40 minutes. Stir occasionally to break up large clusters.
When golden brown, remove from the oven and set aside to cool. When granola reaches room temperature, fold in dried fruit.
Store granola in an airtight container for up to two weeks.
Serve this almond nutmeg granola with Greek yogurt or a bit of almond milk. Your taste buds will thank you.
