Some nights call for something light.
That’s when I like to whip up a batch of couscous.
1 box of Near East couscous
1 small cucumber, peeled
20 grape tomatoes, halved
1 chicken breast, baked and cubed
extra virgin olive oil
fresh cracked pepper sea salt
juice from half a lemon
shaved parmesan to garnish
Cook couscous according to directions on packaging.
While couscous is still hot, stir in chicken, tomatoes, cucumber, lemon juice and a dash of olive oil. Season as needed with fresh cracked pepper and sea salt. Give couscous a final stir and set aside, either at room temperature or in refrigerator, to let flavors marry.
This dish can be served at room temperature or chilled. Garnish each serving with shaved parmesan and an extra bit of pepper.
