Devil’s food cake + peanut butter . . .
Devil’s food cake is my Achilles’ heel. I love the chocolate-y richness. The addition of extra chunky peanut butter cuts it quite nicely, especially in cookie form. This recipe is quick and easy–it calls for a boxed cake mix and a few other delicious additions.
makes ~2 dozen cookies
1 box Devil’s Food Cake mix
1 c. chunky peanut butter
1/2 c. vegetable oil
2 eggs
2 tbs. water
1 c. mini chocolate chips
In a large bowl, combine the cake mix, peanut butter, oil, eggs and water. Mix until incorporated.
Gently fold in mini chocolate chips, making sure not to over mix the dough.
Place spoonfuls of dough onto a large baking sheet. Leave about 1-2″ between cookies because the dough will spread a bit during the baking process. Press a fork onto the top of each cookie.
Bake at 350 degrees for 8-10 minutes.
Remove from the oven, and set the cookies on a wire rack to cool.
