Two delicious treats bundled up into one–
a layer of cookie on the bottom and fudge brownie on top.
1 batch of cookie dough
1 bag of fudge brownie mix
1/4 c. water
1/2 c. canola oil
2 eggs
9×13 glass baking dish
Preheat oven at 350 degrees, and line your 9×13 glass dish with parchment paper.
Begin by first layering the unbaked cookie dough on the bottom of the dish. This layer should be at least 1″ thick, spread evenly.
In a large bowl, combine the fudge brownie mix, water, oil and eggs. Stir until well combined. Pour the brownie batter on top of the first layer of cookie dough.
Bake at 350 for 20-25 minutes or until the batter in the middle no longer jiggles when moved. Remove from the oven, and transfer to a cooling rack.
The cookie layer will be completely baked, but the top brownie layer will still be slightly gooey. This is exactly what you want.
Leave the cookie bars uncovered until they are completely cooled. Once room temperature, cover and put the bars aside to let them set overnight.
To serve, pair each cookie bar with a scoop of vanilla ice cream.
