Naan pizza that tastes like summer–
asparagus, red bell peppers, peas and feta.
naan, homemade or store-bought
asparagus, ends removed and cut in half
red bell pepper, cut into thick strips
1 c. frozen peas, cooked
crumbled feta cheese
light Caesar dressing
sea salt
cracked black pepper
Preheat oven to 400 degrees, and grease a baking sheet with extra virgin olive oil.
Place red pepper and asparagus on baking sheet, toss with more olive oil, sea salt and black pepper, and roast for ~20 minutes. Once the vegetables are roasted to preference, remove from oven and cover with foil to keep warm. Set vegetables aside.
Brush the naan with olive oil, and place them in the hot oven directly on the top rack. Flip the naan after 2-5 minutes, making sure there are slight grill marks on both sides.
Once the naan is warmed through, start assembling the pizzas.
Begin with the light Caesar dressing, and stack each naan with asparagus, peppers and peas. Top the pizzas with the crumbled feta and an extra bit of black pepper.
