This spicy chorizo roll is a simple sandwich that packs a punch.
whole wheat roll
spicy chorizo sausage
arugula
one clove of garlic, peeled
extra virgin olive oil
coarse sea salt
cracked black pepper
Cut the sausage to fit the roll and then in half to open it up. Place each piece on a grill (or in a grill pan) until char marks appear and meat is cooked through. While the sausage is grilling, prepare the roll. Slice it in half, spread olive oil on the cut sides, and season each side with a bit of salt and pepper. Place the bread on the grill to toast. Once golden brown, remove the hot roll, and rub each cut side with the raw garlic clove. This will infuse some garlic-y flavor into the toasted bread. To build the sandwich, place a big handful of arugula on the bottom half of the roll. Next, add the sausage. Finish with the top half of the roll, and carefully press down to ensure nothing falls out. Serve the sandwich with a side of honey mustard sauce. The spicy-sweet combination is sure to please.
