My co-workers introduced me to the Red Iguana a couple of weeks ago–I’ve been dreaming of their menu ever since. Though they are known for their Signature Mole Dishes, I’d say it’s nearly impossible to order something that isn’t delicious. Need proof? Rain or shine, there is always a crowd waiting to be seated. Red Iguana even opened a second location two blocks away just to satisfy the starving masses.
Let’s talk food. We started with chips, salsa and guacamole. It didn’t disappoint. For the main course, I went with Huevos Rancheros, and the rest of the table ordered an assortment of tacos, enchiladas and fajitas. No matter the dish, the portions were hardy, the ingredients were fresh and there was plenty of authentic flare. Red Iguana knows a thing or two about cooking killer Mexican food.

yes! We discovered this place when we were on a ski trip there a few years back. So glad that we happened to stumble upon it. We also discovered after the fact that it was on Diners, Drive-ins and Dives. Reservations are a must too, wait time is significantly less. Oh I want to go back, hopefully next winter/ski season!
