Freezer jam . . .
With a basket of strawberries and a couple of peaches, sweet freezer jam is only a few ingredients away. I made a double batch over the weekend–a jar to enjoy now and a jar to save for later. You can even whip up enough to give to a neighbor or two. I guarantee they’ll love it.

Recipe adapted from my mom’s famous freezer jam.
3 c. strawberries, hulled and halved
2 large peaches, pealed and sliced
3 c. white sugar
1 c. honey
1 pouch of CERTO
2 tbs. lemon juice

In a large bowl, crush strawberries and peaches using a potato masher or wooden spoon. Stir 3 cups of white sugar and 1 cup of honey into the crushed fruit. Once the mixture is completely incorporated, let the fruit stand for 10 minutes. In a small bowl, empty the CERTO pouch and stir in lemon juice. Pour CERTO into the crushed fruit mixture and stir for 3 minutes. The ingredients should combine completely.
Transfer jam into prepared glass jars, making sure to leave 1/2 inch at the top to allow the jam to expand once frozen. Store jam at room temperature for 24 hours to let set and then place in the freezer.
