The perfect munchies for a winter picnic . . .
1 box vanilla Chex cereal (roughly 9 c.)
1 c. unsweetened coconut flakes
1/4 c. butter
1 tsp. pure vanilla extract
1 c. white chocolate chips
1 1/2 c. powder sugar
Place Chex cereal in a large bowl and set aside until later.
Heat butter and white chocolate in a small saucepan on low heat, stirring to keep the mixture from burning. Continue stirring until mixture is completely combined. Remove from heat and stir in vanilla extract. Pour the mixture over Chex, and toss with a wooden spoon until all the pieces are coated.
In a large ziplock bag, combine the powder sugar, coconut flakes and butter coated Chex. Shake until all the pieces are covered, and spread onto a parchment lined cookie sheet to let the muddy buddies set.
