Strawberry freezer jam . . .
My mom always keeps a jar of this jam on hand–it’s quick, easy and stores in the freezer.
2 c. crushed strawberries
2 tbs. freshly squeezed lemon juice
4 c. white sugar
1 pouch of CERTO
Wash and rinse jam jars that come with tight fitting lids, and set aside until the jam is ready to fill. These hexagon 6 oz. glass jars make the perfect gift.
Prepare the strawberries: wash, hull, crush them with a potato masher and measure out exactly 2 cups. Transfer the 2 cups of crushed strawberries into a large bowl.
Slowly measure out 4 cups of sugar, adding it to the large bowl one cup at a time. Stir the sugar into the crushed strawberries, and let the mixture stand for 10 minutes.
In a small bowl, combine the CERTO and lemon juice and stir. Pour this mixture into the crushed strawberries. Stir again until all the sugar has dissolved. This should take about 3 minutes. The texture should not be grainy.
Pour the jam into the prepared jars, leaving 1/2 inch at the top. The jam will expand a bit as it sets and later freezes. Once all the jars are filled and covered tightly with lids, let the jam stand at room temperature for 24 hours.
This strawberry freezer jam can be stored in the refrigerator for up to 3 weeks or in the freezer for up to 1 year. If frozen, let it thaw in the refrigerator before serving.
