Homemade Ranch sour cream . . .
Even though we haven’t seen much snow this winter, we’ve had our fair share of cooler temps. Cue up the comfort food! I’m 100% convinced that this corn chili is the perfect dinner on busy weekdays. It takes under 30 minutes to make, and the recipe calls for pantry staples I usually have on hand. A jar of pasta sauce is the secret to our half-hour success–it basically does ALL the heavy lifting. And that homemade ranch sour cream? Guys, it’s the icing on the cake!

Description
This 30 minute recipe is delicious and uses everyday, pantry staples.
Ingredients
For the chili:
- 1 jar of pasta sauce (your favorite flavor)
- 1 small bag of frozen corn
- 1 can of kidney beans
- 1 can of chili beans with tomato juice
- 1/2 pound ground turkey (browned)
- 1 tbs. chili seasoning
- 1 tsp. onion powder
- 1 tsp. garlic powder
- salt + pepper to taste
- freshly grated parmesan cheese as a topping
Four the sour cream:
- 1 (12-16 oz.) carton of sour cream
- 2 tsp. of each dried dill, dried parsley, dried chives, onion powder and garlic powder
- salt + pepper to taste
Instructions
In a large sauce pan, start combining the chili ingredients: pasta sauce, browned ground turkey, canned beans and frozen corn. Stir together, and let simmer on low-medium heat.
Add the chili seasoning, onion powder and garlic powder. Also add healthy sprinkle of salt and pepper.
Cover the chili, stirring occasionally until the flavors combine and the sauce begins to thicken. This usually takes 10-15 minutes. (If your chili becomes too thick, you can always stir in a bit of water to thin it out.)
Next, it’s time to make the sour cream. Combine the dried herbs, onion powder and garlic powder in a medium bowl. Add the sour cream, and mix to combine. Season the seasoned sour cream with salt and pepper to taste.
Once the chili is heated through and your desired thickness, serve it up! We like to top ours with freshly grated parmesan cheese and a dollop of Ranch sour cream.
Notes
If you’re in a pinch (or simply prefer the semi-homemade approach!), you can pick up a packet of Ranch Mix Seasoning from your local grocer or via Amazon. I like to keep a few packets tucked away in the pantry because they instantly elevate a 30 minute meal. Think chicken seasoning, a quick veggie dip (combined with Greek yogurt) or even sprinkled on roasted veggies for Sunday dinner.
Be sure to store your homemade Ranch sour cream in a sealed container in the refrigerator. Ours never lasts more than a week!
